Sauteed Curried Mushrooms

- 1/4 teaspoon curry powder
- 2 dashes paprika

- pepper
- 1 teaspoon butter
- saute onion and mushrooms on medium heat with olive oil, curry powder and paprika powder for 5 minutes.
- add salt and pepper to taste.
- ad butter and saute for another 5 minutes or until mushrooms have reached desired pan fried crust.
- serve with your favorite protein or on its own with buttered french bread.
Quick Flatbread Pizza
Serving for: 2 Persons

- 2 flour tortillas (try flatout flatbreads)
- 4 teaspoons olive oil
- 6 ounces tomato paste
- 2 large mixed mushrooms
- 1/2 onion
- 2 ounces feta cheese
- 2 ounces pre-shredded mozzarella cheese
- 3 ounces pepperoni
- 1 teaspoon basil
- 1 teaspoon oregano
- Place tortillas over parchment paper on a cookie sheet.
- Spread a teaspoon of olive olive oil over each tortilla.
- Spread 3 oz of tomato paste over each tortilla.
- Preheat oven to 400 degrees.
- Next place pepperoni over tomato paste.
- Slice and spread onions and mushrooms next.
- Add basil and oregano and drizzle remaining olive oil.
- Top with crumbled feta and pizza cheese.
- Bake for 12 minutes or until cheese is browned and crust looks crispy.
Creamy Mushroom and Rice Soup
Serving for: 4 Persons

- 4 cups water
- 2 vegetable bouillon cubes
- 2 teaspoons olive oil
- 1 garlic clove, minced
- 1/2 teaspoon butter
- 3 tablespoons cornstarch
- 2 cups cooked brown rice
- 8 ounces mixed mushrooms, sliced
- 1 stalk celery, cut into large pieces
- Place 1/2 cup cold water and the corn starch in a bowl with a well-fitting lid. Shake vigorously until combined. (You can also combine them in a blender.
- In medium soup pot, heat garlic and olive oil. Add mushrooms; saute until soft.
- Add remaining ingredients, except rice. Cover and simmer about 20 minutes.
- Remove about half the mushrooms. Use an immersion blender to fully puree soup. (You can also put half the mushrooms, the celery, and 1 cup of liquid into a blender and blend until smooth.
- Return the rest of the mushrooms to the pot, and add cooked rice. Cook until heated through, about 5 minutes.
